ARTICHOKE DIP   

This is a very popular dip for parties and social functions, and goes very well with either water crackers and biscuits or even potato, or corn chips.

The quantities listed below yields a little over a pint of finished dip and may easily be multiplied by increasing each ingredient by an equal amount.

Ingredients:

1 to 1 1/2 can of ARTICHOKE HEARTS drained and chopped or mashed.

1 cup of mayonnaise 

1 cup of dry grated parmesan cheese.

Mix this all together. Then put the mixture  in an open casserole dish and place it in the oven on the middle rack at 400 degrees, until it is browned on top. For stronger flavor use dried containerized sprinkle cheese, this seems to be the most popular way. However for a milder taste you can use 1/2 of the required amount in the form of fresh grated parmesan, usually available in  ready to use packages.

 

This dish is garnished with a fresh Artichoke in the center with slices of Kiwi fruit slipped into the petals of the Artichoke.
